One thing I try to do whenever I visit a new city is experience more than one side of its food scene.
Sure, Denver has creative brunch spots and plenty of restaurants worth seeking out. But after a few days of exploring the city, I found myself craving something smoky, hearty, and comforting. Again. Earlier while in Denver my kind Lyft driver shared her favorite BBQ restaurant in Denver. While there, a customer of the restaurant saw me photographing my order and asked if I was a food blogger, of course I said yes. With that, he told me how much he enjoys the restaurant we were in, but asked if he could share another favorite BBQ restaurant of his. I absolutely said yes and he gave a glowing review of Post Oak Barbecue.
Fast forward a few days and there I was in line at Post Oak.
Lucky for me, I got there right before the line made its way out the door and down the street. I let out a huge sigh of relief to see I beat the crowd, and shortly after the waitress came up to me to let me know she had a table on hold. That was my favorite thing to hear. That regardless of how busy they may be or how long the line may get, seats are saved in order for those who are in line. While making my way to the register and watching the meat being prepared behind the counter, the unmistakable aroma of smoked meat confirmed I’d made the right choice.
Keeping things simple, I ordered a half-pound each of the Burnt Ends ($19.50) and Prime Brisket ($19), along with Cowboy Beans ($6.50) and two small Cornbread Muffins ($5).
The brisket had such tender and juicy qualities alongside a rich smoky flavor without needing much sauce. However, the burnt ends quickly became the star of the meal. Their caramelized exterior gave way to incredibly tender bites packed with a powerful savory flavor. They were both the types of barbecue that made me slow down to simply appreciate it.
The beans and the muffins were both the right choice to accompany the meats. Warm, hearty, soft, and just slightly crumbly and absorbed the butter. They were both the perfect finishing touch.
By the end of dinner, I was reminded why I never mind making room for barbecue when I travel. Every pitmaster has their own style, every city has its own take, and every tray tells a slightly different story. Post Oak BBQ delivered the kind of meal that leaves you full, happy, and already thinking about your next bite.
